Strong Farm Veggie Van
The Veggie Van is fueled by the Strong Farm Incubator, a partnership between Stoll Farms, Baldwin Greenhouse & Nursery, and Strengthen ND. It delivers fresh, locally grown produce directly to schools, retailers, and institutions across the region. By supporting new growers with land, training, and infrastructure, the incubator is helping make nutritious, homegrown food more accessible to communities throughout North Dakota.

Empowering Communities Through Fresh Connections
The Veggie Van is more than a market on wheels – it’s a mobile movement to bring fresh, local, and culturally relevant food directly to North Dakota communities. Powered by Strengthen ND’s Strong Farm Incubator, the Veggie Van connects small producers to rural families, creating a more resilient, equitable, and accessible food system across the state.

Supporting Farmers. Empowering Communities.
By sourcing from North Dakota growers, the Veggie Van strengthens our local food economy and keeps dollars circulating in rural communities. We collaborate with local partners—from food co-ops and health clinics to libraries and churches—to ensure every stop on the Veggie Van route is built around real needs and local input.

Recipes to Try with Your Veggies!

Italian Pasta Salad
Ingredients
8 oz pasta cooked according to package instructions
1 large diced cucumber or 3 small diced cucumbers
Salad peppers diced
1/2 of a container of salad tomatoes
1/2-1 Package of mini salad pepperoni
1/2-1 Package of small mozzarella pearls
Sliced Olives (optional)
Italian dressing to taste (1/2 bottle)
Instructions
Toss cooked and cooled pasta with Italian dressing. The pasta will absorb the dressing as it sits in the refrigerator. If you are preparing the night before, add more dressing so the salad isn’t “dry” the next day. Add diced cucumbers, diced peppers, pepperoni, and olives if using. Stir to combine. Add mozzarella pearls just before serving. Serve chilled at your next gathering.

Cucumber Salad
Ingredients
Cucumbers thinly sliced
Red onions, thinly sliced
White wine vinegar
Honey
Salt
Fresh dill and chives
Freshly ground black pepper
Instructions
Toss the veggies with the vinegar, honey, and salt. Stir well so that they are evenly coated and that the honey is well dispersed. Then, chill the salad for 20 minutes. After 20 minutes, you’ll transfer the salad to another bowl or serving dish, leaving the water behind. This way, your cucumber salad will be less soggy.
